Fill a large bowl with cold water and place the potatoes in it. Allow to soak for 15-30 minutes at room temperature.
Rinse and strain, place potatoes on a plate with paper towels and pat them dry.
Preheat the oven to 425 F. Coat a large baking sheet with parchment paper.
Put the potatoes in a clean and dry bowl. In a small bowl, mix all the seasoning ingredients. Sprinkle them with potatoes, making sure they are evenly coated. Drizzle with oil.
Transfer the potatoes to a baking sheet, leaving little space between each.
Bake for 15 minutes. Then carefully fry the fries ((best used by a metal turntable). Bake for another 15-20 minutes until golden and crispy on the outside and tender on the inside. Leave them to cool for 5 minutes, then transfer to a plate and serve with your favorite dipping sauce .
