This double baked Pioneer Woman Capsule Potato is an easy idea for an Thanksgiving meal, Christmas or any family dinner!
ingredients
- Og pounds of bacon
- 8 medium-sized Russet potatoes
- 3 tablespoons canola oil
- 2 sticks of salted butter softened and diced.
- 1 cup sour cream
- 1 cup of whole milk
- 1 cup grated cheddar cheese plus more topping
- 2 teaspoons seasoned salt
- 3 green onions sliced
- Salt and pepper to taste
instructions
- Preheat the oven to 400 degrees.
- Remove the butter, sour cream and milk and leave them to be cool when combined with the potatoes.
- Clean the potatoes. Wipe them dry and rub with canola oil. Place them on a baking sheet and bake for 40 minutes, until they are easy to cut through.
- While the potatoes are baking, cook the bacon in a large saucepan over low heat. As the edges begin to curl, rotate them periodically until they are evenly cooked. Leave them on a plate lined with paper towels to cool once.
- Remove the potatoes from the oven and reduce the heat to 350 degrees.
- Leave the skins on two potatoes and peel and discard the remaining skins. Slice each potato into thirds and add to a large mixing bowl.
- Slice the cooked bacon and set aside for a drizzle. Add the rest to a mixing bowl along with butter, sour cream, milk, grated cheese, spicy salt, and some salt and pepper.
- Mix the potatoes with the mashed potatoes until well combined and creamy.
- Add the potatoes to a greased baking pan. (Mine was 11.25 "x7.75", but any size works.)
- Top of the pan with reserved bacon and extra chopped cheese.
- Bake, uncovered, for 20-25 minutes. Sprinkle with chopped green onions and serve!
-This porridge can be prepared up to two days ahead of time. You will prepare the whole pan as stated in the recipe, but set aside to bake it until you are ready to serve it, and then you will need to refrigerate it.
-When you are ready to bake it, you will want to cover the top and bake for 10-15 minutes. Then remove the top and bake for 25 minutes.
